It would still have iOS to use as a phone. Mac OS would only be available when plugged into an external monitor, keyboard and pointing device. As per DEX on Samsung devices.

Yup. The consolidation into one architecture will definitely make it possible.
It would also bring up the idea of an Apple 2-in-1. In laptop mode it's macOS, in tablet mode it's iPad OS. Another possibility.

What would be interesting would be some sort of disk sharing: iOS apps installed in iOS automatically available in Mac OS with the same sandbox. Share documents folder etc.

I don’t see this stuff happening anytime soon. They surely played with it in a lab but I doubt that’s even an option that’s commonly used with Samsung phones.

Apple is heading to the port less iPhone and in my opinion won’t want to sell Macs for a phone with docking stations.
