I have the same question but on a 5,1. Want to know if I can install bootcamp Windows 10 on a Raid 0 drive in Mojave or Catalina.

Windows cannot be installed to a raid... well, computers can do anything if they have the software for it but the software to do what you want probably doesn't exist.

There is no hardware raid in MacPro3,1 for the four internal drive bays so you need some software solution.

MacPro3,1 boots Windows only using Legacy BIOS mode (I haven't tried EFI booting yet). So the MacPro3,1 will boot to a legacy BIOS boot loader on a non-RAID partition of one of the drives. Then that legacy BIOS boot loader will load a legacy BIOS software RAID driver. When Windows boots, it needs to transfer control from the BIOS software RAID driver to a Windows software RAID driver, so you need a Windows software RAID driver as well. Probably none of that exists (I haven't checked).
