I am getting a MacPro 5,1 12 Core 2.4 Xeon with 64GB of RAM. Good enough to last a lifetime, but I see that Big Sur will not officially run on it. Shame... is it worth it to go through the hassle or just install Linux?

If Linux, which distros are you using? This machine I assume can run any of the latest versions. Yes?
 
I would recommend 10.15 Mojave any day. But if you don’t have a Metal capable gpu High Sierra is a solid choice.
