Bit of a newbie thing here but I thought memory had to be matched pairs - noticed the base MacPro on apple store is configured 3 modules x 1gb. Assume it must work as such. If one upgraded with say a pair of 2gb sticks would you expect that taking out one of the original sticks for a 2x1 and 2x2 set up be the best or would it matter if three originals were left in?
 
Matched pairs was for 2006-2008 Mac Pros. Now you really only need all the modules to be unbuffered or all be registered, though there are still issues with wildly different spec'd modules.

2x2Gb + 1GB is fine as is 2x2GB + 2x1GB.
