As I just ordered a Crucial M4 512GB I thought I might reconfigure my 2 HDs currently set to SW Raid0 that I was using as my boot drive.
Can I (or should I) run SW Raid5? I can shove a couple of more HDs in there similar to the 2 already in it and Raid5 them all?

When you say SW RAID do you mean Apple's native ability or a third party software? If you mean the former there is no RAID 5 just 0,1, 01 and 10.
I have booted up on striped drives with no issues. However, if an issue occurs on one drive, the entire stripe is lost.
Scenarios I have tried successfully -
3xdrives raided + 4th drive that was larger than the total volume created by the stripe and used it for a backup internally. If the RAID fails, I can use the back up immediately.
Boot up on single SSD, stripe 2 regular drives for scratch space, 4th drive again for backup
RAID 10 regular drives -works but no real value given there are other options that appear to work better. I consider 10 best left for network storage.
I would suggest you consider boot up on your SSD along with your apps. Additional consideration for other drive(s) for scratch space, downloads etc.
Asynchronous back up to 4th drive - as in full back up once, then manually or by setting do backups of deltas (differences). Simple software such as the CC cloner and Superduper should work very nicely. Btw a nice combo would be SSD boot up, two velociraptor drives striped for scratch and downloads etc. and then a 4th simple drive for back up.
