Mail 13 choice of Heading cols are no longer available

Just installed Catalina, all seems Ok but it takes a long time..

One issue is on the new version of Apple Mail you cannot select the headings of the cols you want displayed in th email window ie all you can do now is to select the sort order.

Or have i missed something?

I could not handle Apple Mail any more, with the ridiculous method of displaying mails, so gave up don't use Apple Mail anymore, Switched to Postbox
