I've got something going on with Apple Mail that aggravates me.

It has to do with completely unwanted spam email addresses popping up when I'm composing a new email document.

For example, if I create a new [empty] email, and then type the letter "R" into the "to" line, I get not only addresses in my [actual] previous recipients list, but an additional list of unknown and unwanted addresses (many of which appear to be spam).

I also see at the head of this list:
"Siri found in Apps"

Again, I'll restate:
These email addresses ARE NOT in my "previous recipients" list.
(so I can't "remove them" from that list manually, because they're not there to begin with)

I don't know where they're coming from (they might have come from deleted email spam, perhaps email that my ISP deleted before reaching me).

I would prefer not to even see these spam addresses.

I've deleted the Siri app from Applications (I've NEVER used it).
The spam addresses still show up.

Is there any way to TURN OFF this unwanted feature/nonsense?

That would really annoy me too. The only way I know to avoid this is to block the offending spam address. I just re-tested this by typing the first couple of letters of an address I know is blocked, and it doesn't populate in the To: field.

Also under Siri settings > Siri Suggestions & Privacy, even though you've deleted the app, did you turn off the Siri suggestions for Mail? I don't know if these settings are grayed out if Siri has been deleted because although I don't use it, I haven't deleted it ... yet.

WildSky, THANKS for your suggestion above.

Since I had previously deleted Siri, there was no preference pane for "Siri Suggestions & Privacy" in System Preferences.

What I did to resolve the situation:

Even though I had deleted Siri from my Applications folder (and had cloned that folder over this morning to my Sunday morning backup), I was able to locate a copy of the Siri.app on my "off-site" backup that I keep in the car.

I copied that over to the Applications folder and rebooted.

Siri Suggestions & Privacy now re-appeared in my System Preferences panel.

I went into it and UNCHECKED EVERYTHING.

Rechecking Mail.app, when I go to compose a new email, all the stupid/spam suggestions that were formerly coming from Siri ARE GONE.

Siri is of no use to me, as I'm on a Mini and have no mic connected.

Thanks again for your suggestion!
