Mail in Offline Mode

Does anyone have a recommendation for working with email offline? Mail.app doesn't stay offline when connected to Gmail accounts, AirMail doesn't have Offline mode. I'm stuck.
 
Why do you need an "offline" mode for? What difference does the online vs. offline mode offer? The app itself will still operate exactly the same.
 
The reason is that I find it very distracting to answer messages when tons of new messages coming in at the same time. I feel like I'm getting nothing done. Almost like raking when new leaves are falling from the trees.

I see. Could you adjust the interval Mail checks for new mail, or even set it to manual?
