I am running iOS 11 and I would just like to ask if there is any reason as to why under Settings/Notifications/Mail and the Allow Mail Notifications are enabled but it is not set to Show on Lock Screen by default while others are set to show on Lock Screen like Messages, Phone, Calendar, Reminders, and so on. But why are Mail notifications the only one that is not set to show on the lock screen? Is this by default?

As for privacy concerns, I set these notifications on lock screen to Show Notification Previews Only when the phone is Unlocked.

I'll just chime in that I don't know the default setting for Mail's lock screen notifications since I've been restoring from backups since, at the latest, iOS 9.

That is the default setting, and is most likely that way to not clutter up your lock screen with too many notifications. Just a guess.
