On my Mac I’m going through my inbox and finally organising it. I’m trying to resume on my iPad and struggling.

Specifically:

1. Is it possible to filter the inbox by sender? I can’t find that option

2. I can make a new folder/mailbox, but I don’t see how to nest it. It wants me to have a folder under the root mailbox, like Gmail > New Folder. But I want to nest it like Gmail > House > Buildings

Are these possible?

1. Yes, you can filter by sender. If you start typing an email address Mail recognizes as a sender, you'll see them in the search list under "People"; touch that to filter.

2. Create your House mailbox. Then create Buildings, but set the "Location" to House. That'll make it a sub-folder.

Alternative option: If you only need to do this for a few specific senders, set up Smart Mailboxes for them
When I’m doing a large inbox tidy (I started with 5000 emails and have whittled down to 800), i set the overall filter to sender. That way, every single email from the same place is batched and I can appropriately file it. Manually starting a search isn’t quite the same and I don’t remember all the senders, so it’s a major convenience for the inbox to be organised as such.
2. Create your House mailbox. Then create Buildings, but set the "Location" to House. That'll make it a sub-folder.
I have that already set up but the option to put it under the folder isn’t there. There’s just “gmail”. Even when I create the folder there’s no option to move it from the Edit menu

Sorry, I got a bit mixed up with your "On my Mac" comment so I initially responded as though you were doing it on a Mac. I fixed the replies. But you mention you "set the overall filter to sender" - filter determines what shows and what doesn't; you'd need to specify. Do you mean Sort perhaps?

My iPad is running iOS 16 so can't test creating folders in iOS 15 at the moment, but I'm able to create sub-folders on my iOS 15.5 iPhone in Gmail.

Sorry, just me being vague- I do mean sort. So the inbox rearranges from being in order of date or unread, to grouped by sender.

When you say you can create subfolders in gmail, are you using the gmail app? I’m using Apple Mail, with a gmail address (I’m not a fan of the official gmail app)

Sorting - I think you're outta luck. I don't know of a way to sort and some quick Googling didn't give me any results.

I am using the iOS mail app - the iPad on iPadOS 16 and the iPhone on iOS 15.5 seem to be behaving more-or-less identically. Open the Mailboxes view, touch "Edit", touch "New Mailbox", put in the name, select the location.

The locations when creating a mailbox both show one with a blue "g" logo, that's the "Root" of Gmail if you create the folder there. Then you can select THAT folder, when creating the sub-folder.

I have in the past used the Gmail app and it certainly had some advantages, including "Push" email notifications. But since I use both Gmail and iCloud, I switched back to the iOS mail app. Gmail might give you the options you need though?

It’s not a huge problem, I’m just trying to make more use of the iPad. But these minor little differences are what generally keep me from the iPad in favour of going to the mac, it feels a strange omission to not let us sort our view beyond unread

When I want to do organize my Gmail account, I use the desktop Gmail website in Safari instead of apps.

It has worked pretty well since iPadOS 13 albeit somewhat reload/crash prone on 4GB RAM when you do batch tasks in succession. I get fewer reloads/crashes on M1/16GB.

I just wish the Mail app was consistent on Mac and iOS. I’m not a big fan of the gmail UI so I use the mail clients instead
