Hi,

With the iPad you can set restrictions for items like Safari, Youtube, iTunes etc through the settings.

Does anyone know how to do this for mail? if possible?

If not, does anyone know of a suitable app or how to password protect mail?

How about just using the mail domains web client? I don't think there's a way to lock mail from use.
 
I password protect my iPad. But I would like to have a lot more applicaiton security. At least allow for multiple Desktops so I can let someone use my iPad without seeing my private data.

no additional info I'm afraid but I totally agree, multi-user would be desirable but per application password protection is sorely needed - I wish they would add it
 
If your jail broken there is a cydia app. called Locktopus that will password protect any app u like. Works great.
Yeah, User accts. Would be nice tho.
