Why do I have to run this manually? I would have thought it would do it by itself.

Erm.. because rules only are compared against incoming mail?
So, if you go on vacation for 2 weeks, come home and check your mail, all your "new" mail that is 7 days old... POOF -> Archive
 
True...forgot about that. Doesnt help me though. :) Maybe an automator thingy will work for that?
