Mail sending from Mac Mail looks odd in Outlook

When I send an email to myself in Mac Mail (MacOS Monterey) and open the email in Outlook, the characters look strange.

"<html> <body> <div> Test 1234567890 </div> <div> <br> </div> <div> <br> </div> </body> </html>"

Is it Outlook that cannot display the characters correctly, or do I have to config something in Mac Mail?

I'm having the same problem since ('I think') the most recent Monterey beta (21A5534d)... I'm also on the Office 365 Beta channel, so I can't confirm if it's the Monterey beta OR the recent outlook beta. (My current version of Outlook is 16.55.21092802). Also, it's not just emails sent from Mail, it's other emails for me.
