I've known for some time that graphics look more saturated on Windows than they do on Mac.

How do you approach it? How do you make them look good on both platforms?

Could you direct me to a primer or tutorial on the subject?

i would test them on both a mac and a pc. Also, maybe calibrating the monitor would help a bit...
 
Personally I just ensure that my screen is calibrated correctly before doing anything and then work to my screen etc. With the amount of different screens, environments etc theres always going to be differences but as long as it looks ok on mine then it should work on others assuming they've not got some totally random settings :)

Also iirc apples heading towards the windows gamma of (I think) 2.2.
 
You cant do anything about it, the default gamma in OSX is stupidly bright, which lightens and washes out images compared to normal gamma.

You dont have to worry about it if you are using a Mac, your images should look better on Windows with 2.2 gamma since practically everything looks better with 2.2 gamma. If youre in windows then you might want to temporarily brighten your image to check for weird artifacts in the dark areas since they may show themselves with OSX's brighter gamma.

I think only iMacs and Apple monitors have this problem though, third party monitors should use a color profile with 2.2 gamma as default, Im pretty sure my Dell 2005FPW did.
