One of my friend's is about to move to China, and wanted to be able to input and edit Mandarin Chinese on his Mac. I was wondering whether anyone knew how to do this? I can find the International pref pane and switch on alternaitve keyboards, but it doesn't seem to change anything. Do I need to buy a chinese font or something in order for characters to show up? How does it all work?

All that is build in is "traditional" and "simplified" Chinese.
Your friend should look in the Internnational PrefPane and go to the Input Menu tab, and turn on the Input Menu for both and see if the characters required are there. Otherwise you should probably look at the Apple Store online to see if there's a purchasable expansion.
