Hi guys i have three "old" macpros dual quadcore harpertown. the rams inside use a big heat sink (not as big as ram in xserves).

Could i install ddr3 ram which does come without heat sink? i mean replacing all the old ram by new one without heatsink?

This is the type of RAM you need:

240-pin PC2-6400 (800MHz) DDR2 ECC fully-buffered DIMM (FB-DIMM)

The big heat sinks aren't essential for operation, but those sticks tend to get pretty hot.
 
Honestly, you really should use modules with the Apple-approved heatsinks. FB-DIMMs run pretty hot even with heatsinks. Besides, the price difference is pretty insignificant. A couple of good vendors:
