For some reason the stock app Maps knows my daily routine and gives me notifications when I'm going to/from work about how long it will take me to get home.

What is causing this & how do I turn off...?

What iOS version and device are you using?

Sounds like there are a few things to check. Frequent Locations under Settings > Privacy > Location Services > System Services as well as your widgets to see if you have the Maps widget enabled.

Look up the app section in settings, find map app,and disable notifications for it.
That would just disable all maps notifications, rather than just the particular part the the OP is talking about (which is potentially not even controlled by those notifications).

I have similar issue - when I plug in my phone to do carplay it opens maps and gives me directions home - even if I'm just down the block.
