I use the default email, and there must be a thousand in my inbox, similar elsewhere. Is there a way of mass-deleting these? There isn't that I can see, so I did a search here but didn't find anything relevant.

Ideally I'd like to pick a date, say from one month ago and delete everything from there all the way back to the beginning, and on several folders, not just my main inbox.

The folders might make it a little more complicated. But you can just go into one of your boxes, select all, then go back a month and tap and drag up to deselect what you’d like to keep.

There is some limited search capability on date (Search box, start to type "July" and will get option of "July 2024", can then tap "After" or "Before" to get a list but no select all like options), but if the email provider has a web page, might be easier to do this from there.

For example on Gmail, I can enter a search command like "after:2024/2/1 before:2024/8/1" to get a list of email in previous six months. Select All checkbox will be at top of list, click, click delete.

Or Gmail app which has similar compatibilities to search and Select All. And why I have Gmail app installed. Stock mail works just fine for my day-to-day, but when want to tag spam on Google side (which I get very little of and 99% of the time hits Junk/Spam folder) or do more complicated things, app is the way to go. And ditto website, especially when wanting to do things like setting up filters.
