This may be very basic information for most of you guys, but I'm not familiar with how to mass-select songs in iTunes (not using CMD + A).

I've seen it done, so I certainly know it's possible. However, I've been unable to find pertinent specifics in "Help" about it.

I would stake quite a bit of money that someone here knows the keyboard-click combination required to do this. You know who you are!
 
Highlight a song and then shift click another song to highlight all the songs in between.

or

Hold command and individually select/deselect as many songs as you want.

I never knew that thanks.
 
And on a PC, I believe it is CTRL+Click.. Basically making Command the equiv of control for most things..
