I have a 2.0 GHz MacBook, and I was looking to upgrade the RAM from the 2x512 MB that came with it to 1.5 GB by adding a 1 GB stick. The SODIMMs don't have to be matched, do they?

No, but it seems to be fairly well documented that the Intel Integrated Graphics will perform better with matching sticks. That said, unless you happen to do a lot of graphically intensive work (or gaming), the speed increase of other operations will be worth it.
