so basically i know all the differences and such. my only concern is, about the video card (or lack thereof)

i copy a lot of movies to my hard drive as i buy a lot of dvds, but dont like carrying them with me to and from school, so i use handbrake to put them on my hard drive (and going to use ?tv to replace the dvd player)

but would i notice a difference in ripping speeds using handbrake with a macbook pro vs a macbook because of the video card? or is it just based on the processor?

That is a CPU, RAM and hard drive related task. Has nothing to do with the GPU.

You would notice a difference since the MBP is faster than the MB in CPU and has more memory (irrelevant if you are upgrading).

The only thing that the MBP would be better at are 3D, applications. Other than that the MB and MBP will perform almost the same for reasons stated above.
