I have a 2.33 with the 256 card in it, and I've used it several times on a 30" ACD. I haven't noticed much of a difference between how it runs compared to my boss's G5 with 4GB of RAM and a NVDIA 6800 Ultra. You should be happy with that combo.
Of course there will be a performance lose if you are using 3D apps. As soon as you plug in any 2nd display the notebook splits the available video RAM between them. As for just using OS X normally sure it runs fine.

In either case, running a screen with double the resolution is going to hog more video ram. I doubt he's going to be trying to run World of Warcraft on the 30"... but if that's what you're planning, think again :]
