I've just done a CPU-Z check (in Windows) and the RAM chips in my new 2.4 stock MBP is made by Samsung... which is heartening because it's a name-brand as far as RAM is concerned...

My old MB, however, has 2 x 1GB sticks of Kingston RAM, which was one of their "made for Mac" models (model number KTA-MB667/1G)... http://www.ec.kingston.com/ecom/con...fo.asp?root=&LinkBack=&ktcpartno=KTA-MB667/1G

Is it worth swapping out the Samsung RAM for the Kingston, or would there be no real difference? If I did swap out the Samsung and replace it with the Kingston, would it make a difference that the Kingston RAM is about a year or so old now?

Presuming the RAM modules are the same size, then the Samsung and the Kingston will perform exactly, precisely, absolutely the same. They are both 667 MHz, CL5. RAM does not slow down with age (if RAM ever breaks down, it tends to do so catastrophically and starts throwing errors and panics.)

Its the Mac that sets the memory speed, not the RAM. So as long as the RAM is compatible and functioning properly, it will be the same performance as any other 100% compatible RAM.

This is notwithstanding the fact that certain (IMO) less than forthright sellers promote their memory as "hyper" speed, "Maximum possible performance" and "Optimized for multimedia performance" which is all hooey. Companies that do this to extract extra money from the unwary are not to be trusted IMO.

I just managed to get the latch on my memory bay open and found that my RAM modules are from... Nanya

Is Apple cheaping out on ram now? What is Nanya?!

Those are the new Nanya Business RAM modules. Nanya also manufactures the special yellow Nanya Business stickers for sealing LED backlit displays against those overly inquisitive amateur repairpersons. ;)
