My wife and I share a .me email account we use for bills and what not. I have this email account set up on my MBP within Apple Mail.

The incoming mail server section is "greyed out" and I cannot change or edit it, but that isn't the only problem...I'm really just trying to rename the description to something better than our full email address but when I go to save what I've changed Apple Mail says that the incoming mail server cannot be left empty.

So basically this won't allow me to make any changes at all within this email. However, my personal iCloud account that I use for iTunes and for syncing my iPhone will allow me to make any changes I want.

Are you in 10.8.x Mountain Lion? If so did you go into System Preferences->iCloud pane & System Preferences->Mail, Contacts & Calendar and check everything is setup?

Yes, I'm on Mountain Lion 10.8.1.

I just went to these settings and everything is on and setup.

However the email account I'm speaking of is NOT my main iCloud account I use for iPhone, etc for syncing.

My wife and I use this email only for email and that's it. It was an old MobileMe email account we've had for several years.

I wonder if that is the problem, since I never switched it over to iCloud. However I can go to www.iCloud.com and login to that email with password and everything is there and working.
 
That means you have to put the information System Preferences->iCloud and make sure you are signed in on the iCloud account you want to use. Then use the same iCloud account and set it up (the same iCloud account) in System Preferences->Mail, Contact & Calendars. Then this information will need a few minutes to sync with the iPhone (in the iPhone's Setting pane, iCloud settings) if the iPhone is on the SAME iCloud account.

Does this mean I can't have two iCloud email address, one for the entire syncing on my iPhone, MBP with Mountain Lion and the other iCloud for just email?

This but this still makes no sense why I can't change/edit the incoming server or even change the description of the one email iCloud account to something preferable. If I delete the account and start over the all of the incoming/outgoing information is automatically entered.
