After reading many posts on memory and OSX it seems to be general opinion that you have to have 1GB+ to run this smoothly.

So, I want to upgrade my 512MB macbook to a gig. Can I just put a single 1GB stick in the laptop or does it have to be in pairs? If I can just put the one 1GB in can I leave a 256MB stick in to give me more RAM? I'll probably be buying a second 1GB stick at some point, but I can't afford it right now.

Is there much to gain from 2GB over 1GB? I use mainly internet, with a bit of video processing and programming.

Thanks.

putting in 1x1Gig is perfectly fine, and should help a bit since you're running on 512 it seems. its not necessary to run smoother, but a lot of people prefer it and recommend it, because it does help.

and the plus of getting a 1x1gig stick is that if you decide you want to have 2gigs you only need to buy one more stick.

If you can afford to, go to the whole 2GB it will make your computer a lot quicker and if you get two RAM sticks at together they should be "paired" which will allow the graphics card to work better.

I would definitely recommend having more than 512MB RAM in a Macbook, mine is crazily fast with 2GB RAM.

So should I wait until I can afford to buy 2x1GB at the same time?

It will give a significant speed boost and allow you to run lots of applications at once to go up to 1GB, thats the big jump, basically it depends how long it'll be before you can afford 2x1GB and only you can really make that decision.

FWIW with 512MB RAM in my Macbook, I didn't install MS Office as it wasn't universal (not that I use it much now) and I could run about 3 applications at once without beachballing, now with 2GB I can have as many applications open as I feel like and it never beachballs and is always very snappy and most programs open practically instantly.

Does the ram from an imac core duo work in the MacBook?

Yes

Excellent.
Does anyone know a cheap UK supplier? Ebuyer has 1GB stick for £50

I just put in a 2nd gig of ram in my MBP. Haven't noticed any huge speed increases...well, it boots up a LOT faster!
I mainly wanted the 2nd gig because I'm going to be running bootcamp soon.

For the UK Try Crucial, Dabs or Amazon, don't get it from eBay, you'll probably just end up getting burnt.

@Pizzacake, those are insanely good prices, I paid about £160 for 2GB in October, definitely get 2GB if its only £65 or so from Crucial.
