If you can take advice from forum members who know for an absolute certainty from their own personal experiences that somebody's G.Skill or OCZ memory works, that's fine...but be careful shopping on your own if you don't know what you are doing. I got some unusuable memory from Crucial even though I am absolutely sure that I gave them the correct information for my iMac.
About the quantity of memory...are you running a virtual machine, or something that takes large amounts of memory?
Going from 4GB to 8GB, almost everybody will notice a pretty good, big improvement.
Going from 8GB to 12GB, you will notice a solid improvement if you're playing big Windows games or otherwise running a virtual machine that requires you to dedicate 4GB to it for whatever reason.
Going from 12GB to 16GB,
most of us aren't going to notice a hell of a lot of difference unless we are doing some very serious design work or manipulating PDF associated with legislative duties, and since you have an i3 it is likely safe to believe that you're not doing this.
Putting the memory into an iMac is easy, so we all want to do it whether we need it or not, I am sure.
You might want to also search the forums for the occasional reports of iMac that will not recognise the nominal 16GB maximum.
