I'm heading up to the apple store to buy a new iMac with the 3.06 Ghz processor. Comes with two gigs of RAM. I will expand that myself to four, since apple seems to charge way to much for an upgrade.

Any recommendations on who is selling "matched pair" 2 gig chipsets, and for what prices and is a reliable supplier?

I'm thinking OWC... Others?

Uh...what do I do with the pair of 1 gig chips I take out?

I'm not sure about other places, but if you buy from OWC you can get a rebate for sending in your old ram. It's not much but would save you $10.
 
I've always purchased mine from Crucial. Safely packaged, fast shipping. And cheap too.
 
I'm not sure I do anything that requires more than the current iMac.... ;)

Anyway, no one seems to know anything for sure about the upcoming models.

You are getting the high end iMac so you must be doing something that needs power (?).

If you wait you can get same machine for 200$ less
 
Another for crucial ... they've never let me down ...

Or, use their site to get the exact spec, then buy OCZ ram or kingston
