Would like to know how much free memory you have when your iPhone is idle...mine is only 11mb which seems very low?

If you have SBSettings you should get the 'processes' toggle, it will show you what processes are open in the background (mail, phone, safari, iPod, etc).

After killing safari, and ipod, and anything else that remains open (leaving just mail and phone, they are daemons) i idle around 35mb.
