Hi,

On Catalina, the background of the menu bar was silver and text & icons were in black. That combination gave very solid look and complemented Macbook hardware.

But on the Big Sur, it's totally different. It's not giving the option where I can fix the color scheme that I had in Catalina. Any suggestions?

exactly.

too much white, too bright , not enough contrast. icons are like floating on white surface and they are very flat and boring.

curved icons are not fitting the hardware design and conventional rectangular screen. they are too much curvy.

It was a shock at first, but I got used to it. If you can't stand it, go to System Preferences > Accessibility > Display and turn on "Reduce Transparency."
I hate transparency, its one of the first things I close when install os, this includes windows 10. I prefer clean and solid look not the rainbow effects on menu bars.

Not the best solution but a wallpaper with a light color gives you black text on the menubar. I use the Dynamic Big Sur picture and the menu bar text is black while the background is the light blue of the sky.

Exactly! Do this and also untick the setting at System Preferences -> Appearance -> Allow wallpaper tinting in windows.

I won’t say Big Sur looks great this way, but it is already a lot better.

Totally agree.
I have improved it to my liking a little by going into Accessibility >display and increasing contrast.
Just tick the box don't increase 'display contrast' any more than the absolute minimum and even then some of the colours get a bit intense, but I find it a bit easier to see and less annoying.
It basically adds a white line around the menu bar and the icons.
