Pardon the ignorance... but has anyone seen this and know what the hell it's telling me to do?

Presumably that you'll need to open iMessage (from the app icon, instead of from a new iMessage from another app, etc.) in order for the new iOS 10 messaging features to take effect.

Did you install or update a new emoji or gif keyboard?

click the world icon on that screen to bring back the iOS native keyboard

I've done that. I've also deleted the emoji keyboard and re-added. Closed the app and re-opened... still there!

Have you tied tapping in the little globe icon on the bottom left there?

I have done this progression:
  1. Open Message app (update message is displayed)
  2. Tap on the globe (keyboard is displayed)
  3. Tap on globe again (emojis are displayed)
  4. Tap on ABC (update message is displayed... again)
