I noticed that messages is in the list of sources in Health. It says it is set to read Heart Rate.
Anyone know how or what this is supposed to do?

It is for that iMessage effect where you can send your 'heartbeat'. Presumably it will be able to read this data if you are using a Bluetooth device to measure your heart rate.

Are you sure? When I use messages to send a "heartbeat" message it does not apply any data to the health app. The messages data has no data.

It is not applying anything, it is reading from it. You need to have a device that records your heartbeat, then it will send your actual heartbeat in Messages, just like on the Apple Watch.
