I have a question. In iOS 11, if you force touch a new Message notification from the lock screen, it would open a quick reply screen. Then, if you wanted to go to the message in the Messages app, you could tap the message and it would open the Messages app. As far as I can tell, this behavior still works with all notifications except Messages? Am I missing something?

You can open the app by touching the rich notification header. Preventing any old touch from opening the app may be to allow/improve interaction with messages (eg double tap to like/react). Can’t remember how that worked if at all in iOS 11.
 
I'm not sure I understand what you mean by "rich notification header". Do you mean the "...", because I still don't see an option to get into the Messages app from that menu.

Click the message icon or name in the header. Edit: just double checked and it’s actually only the icon, sorry
 
ahhh. Thanks! I see now, but it seems like a strange decision to me. All the other notifications you can tap anywhere and it opens the app. The messages notification you need to tap specifically on the icon. been trying to figure that out through several beta's now, I can't imagine i'll be the only one.

In iOS 12 developers can now have interactive rich notifications which means the default behaviour of opening the app by tapping may be overridden for any apps that take advantage of this (which would be from the release of iOS 12 final at the earliest).

I agree there may be some discoverability issues - maybe this can be improved over time. 3D Touch itself, to get to this screen, has its own discoverability issues!
