I'm going to be using a 2017 iMac to RDP into a Windows 10 laptop. If I connect a Windows layout keyboard to the iMac, will all the keys be correctly mapped within my RDP session?

Will I then be able to map the Windows and Alt keys to Option and Command under macOS?

This doesn't quite answer your question, but you may find it helpful. I remote into my work Windows PC from my Mac Studio every day via the Microsoft RDP app. I find no need to use a Windows keyboard, I just use my Mac Magic Keyboard. Mac Control --> Windows Control; Mac Option --> Windows Alt; and Mac Command --> the Windows key. Works great.

That's useful, thanks. I'd probably have to put a sticker on the keys to remind me which one is which because that's effectively swapping alt and the windows keys around, isn't it?
 
Correct. Control is in the same place on both keyboards, but Windows and Alt (left to right) are swapped as Option and Command on the Mac keyboard.
