I have an old Windows XP machine, connected to an external hard drive via eSATA. Everything I need is on that external hard drive. I'm about to buy a new Mac mini, but I was wondering the easiest and fastest way to transfer everything from the eSATA to the new Mini hard drive?
 
If it's just data and your eSATA enclosure has USB connections also, you could just hook it up and pull data over as the mac should be able to read NTFS and FAT/FAT32 partitions (from what I recall) but just not write to it. If not you could just setup file sharing in Windows and drag the data over. I did this from a Windows 7 machine so I could consolidate all my media from my devices onto one large external hooked up to the Mini.

Migration Assistant will do what you want.
