I will be purchasing a new 27" iMac soon. Presently run a 20" alumac. I was wondering what the best method would be for transferring data to the new machine. Also, can apps migrate as well or does everything need to be installed fresh, on the new Mac?

Do you use time machine? If yes then all you have to do plug the time machine drive into your new mac and use migration assistant to move your data to the new mac. It should move apps as well. There are other options in migration assistant for getting your data moved but I don't remember all of them off the top of my head. (see link http://support.apple.com/kb/HT3231)

Personally though when I get a new computer I use that as an opportunity to clean out my hard drive and think about what I need and want on my computer.

Cheers
