I know that Minis desire matched RAM sticks for graphics speed, but what would happen if I put in 2 2GB sticks? I believe that I would get access to 3.3GB of RAM, but would I speed up the graphics at all as the RAM would be installed in a matched pair that way as opposed to putting in 1 1GB stick and 1 2GB stick?

Your stuck, that integrated graphics was maxed out a long time ago. Its all it can be which isnt much. The answer to your question is No.
