I want to split a video out feed from my Mac Mini to a monitor and a projector at the same time, in mirrored format (so both show the same thing). I know that the Mini has a DVI-I output, my monitor has DVI input, and the projector has DVI and VGA inputs.

How would I best go about doing this?

I saw this doohicky (splits DVI-I into DVI and VGA). Would that work?

Or this one? (Not sure what makes it twice as much as the other one).

From what I can tell, this one would let me use one or the other, but not both at once.

Are these my only options, or is there something else I should be looking for? Are there any drawbacks to going with one of these?

All of them will let you use one or the other, not both at once, they are all simple splitters and no video card can output VGA and DVI on the same wire at the same time. The Gefen is more expensive because it says Gefen on it. I think you want something like this. Not sure if that will work well enough with both monitors running, you might need an actual distribution amp, which would run into 3 digits.

Also remember that both monitors must use the exact same input signal. PJs are fussy, you'll probably have to match that to the Mini first, and then make the monitor match to the PJ.
 
Thanks for the input. If I can only use one at a time, that would actually be fine -- I'll order one and see how it goes.
