Ok, I was connected though SSH on WinSCP and I can't seem to find a few apps under the Applications folder. For example, if I was trying to find the folder for JellyCar, it would usually be under /Applications/JellyCar.app or something like that, but a lot of my apps I can't find!

They are physically on the phone, because I am able to run them and everything, but I just can't find their folder. I've tried restarting, but I just can't find them. I was thinking about updating my firmware anyways, but I figured I'd at least check here first.

I'm running JB 2.2 iPhone 2G 8GB.

Some apps maybe in the applications folder but sometimes you have to dig a little deeper. Try looking in User>Applications
 
um no you have the directory structures wrong. jailbroken apps will be something like /applications/cycorder.app or something but app store apps will be all obfuscated in /private/var/mobile/Applications/bunch of letters & numbers
