ok here's my story:
i had my iphone 3g (2.2.1) jailbroken and all that for a while, it started causing little problems here and there so i decided to restore it .. (my friend said to do so every once in a while, is that true?) .. so i backed it up, restored it, and jailbroke it again. however im missing a few icons. now i understand you have to install catergories again and all that good stuff but heres my problem: my catergories app WAS IN a catergory! so now that's missing. cydia & installer were in catergories too but for some reason i have my cydia icon (but not installer). i tried re-installing catergories from cydia, but it's not showing up (we know why, right) PLEASE HELP! im also missing my settings app and my stocks. the others ones im missing were all downloaded so im not really worried about those

sorry it was soo long , but i figure the more details the better!

ps. when is iphone 3.0 coming out?

I learned my lesson the first time I lost app icons -- NEVER HIDE SETTINGS & CYDIA. If you have those two apps, you can get back any hidden icons.

To OP -- since you have Cydia, install SBSettings, and you can unhide icons from there.
 
I had the same problem. If you have cydia and can access it download g-launcher. It should let you run anything installed.
