I just bought 2 X 8 GB of memory for my late 2012 iMac. It already had 2X4 GB installed so want to add the other two modules I’ve just bought. Is there a particular order to install the sticks? Or can I just put them in any of the slots in no particular order? I have read there is a correct arrangement to make the work in dual channel mode.

As the original RAM sticks have been in the order for the iMac work in dual mode, you just need to install the 2 x 8 GB sticks to the blank slots.
 
If you check in 'About This Mac/System Report/Memory', I believe your current configuration of 2x4GB RAM modules (if factory installed) should look as follows:
Bank 0/DIMM0 4GB
Bank 1/DIMM0 4GB
When you add the new RAM modules you should see the above, plus:
Bank 0/DIMM1 8GB
Bank 1/DIMM1 8GB

This is how I noted that it looked on my late 2009 iMac after I performed a similar upgrade.

Ok so I’m planning on still using the existing factory installed 2 X 4 GB STICKS do I just add the two extra in the blank slots available and leave the original 4gb sticks in their existing slots? Or do I have to change the positions for best performance? Such as bank 1 8gb bank 2 4Gb Bank 3 8Gb Bank 4 4gb?

Leave the original ones as they are, and just add the new.
