I've been reading about changing your root password from 'alpine' to something else when jailbreaking. If you don't have mobile terminal installed, is it still a risk that someone could remotely access to your phone?

Can hackers gain access to your phone if you don't have SSH installed, or can they do it regardless?

You need to have OpenSSH installed to be "vulnerable"
 
Well, mobileterminal has nothing to do with it. If you don't have ssh installed, remote access is not possible because it's not installed by default. If you do, change the password, because alpine is the very first thing any hacker will try.
