One of the people at work sends Calendar invites with wordy names like "breakfast meeting with Suzanne". When I accept, it loads into my calendar with that name -- which is then, as far as I can tell, unmodifyable. So when I view my calendar, it's filled with entries entitled "breakfast meeting with" and "important meeting" and "followup meeting" INSTEAD of what I really want: the NAME of the person. I cannot find a way to modify the event; Calendar won't allow me to do so. A Google search turns up empty. How do I modify the title of a Calendar event if that event was one sent to me and accepted by me, after I have accepted it?

If it's an Exchange calendar, I'm pretty sure only the event creator has the ability to edit the event...at least that's the way it looks at the Outlook Web App on Office 365. Of course, there may be Exchange server options that control this. Not sure if Outlook for Mac or Windows has a per-event guest editing privileges option.
At Gmail and Google Apps (web portal), the event creator can check an option to allow guests to modify events but it's unchecked by default. It also seems that, even when that option is checked, the guest would have to make changes at the Google calendar web portal and those changes would reflect on every attendee's calendar.
I believe you are at the mercy of your wordy co-worker for the original event. You could create your own event at the same time with the attendee(s) names and any additional info you wish.
