Anyone know if it's possible to install Mojave? Catalina will break too many things on my production system, and just aren't ready to transition yet. Still, I'm eyeing the new MP.

No chance. It requires a specific version of 10.15.1 or later.

Same boat as MBP16,1 - you're stuck with Catalina, nothing older except (possibly) via VM.

Actually interested in this as well - I wouldn't dismiss it out of hand. Anything is possible - I'm not sure that the architecture of the new Mac Pro is that radically different than an older Mac Pro. The main stickler might be the T2 chip and a way to disable it, as well as SIP issues. Certainly the Hackintosh community has show you can run various OS version on all sort of motherboards.

Certainly this is not for the novice user, but dismissing it out of hand because Apple says no is not accurate.

A further point is that you might functionality of certain cards (Vega GPU) or afterburner card, etc. But for a more vanilla config it may be very possible. But it will be a bit of a hack.

That said, I am not happy about being forced onto an early version of an OS (Catalina) that hasn't matured yet.

EDIT-Added T2 screen that can be accessed in recovery mode to change security levels.

If it's possible, the amount of work to do it is gonna' be outweighed by the issues you'll have to address. Trying to hack a production system into an older unsupported OS is a terrible idea.

The architecture in the new computer is nothing like any previous Mac Pro. The T2 cannot be disabled; you can reduce the restrictions as to whether or not you can run an unsigned operating system, or boot from external media, but the T2 is an essential part of the computer which handles a lot of the computer's operation. There is no version of Mojave available which has appropriate drivers for this computer.
