I have a 2018 model of 15.6" MacBook Pro which came with Mojave and am on Mojave 10.14.6 currently.
Will an upgrade to Sonoma be smooth ? Will there be any crashes ?

I use web development applications like SublimeText, Visual Studio Code, MAMP PRO 6, JetBrains' IDE, brew etc etc.

What pitfalls do I have to watch for ?

I recommend upgrading to a stable OS first. Ventura or Monterey. Don't use beta versions on your main drive.
Anyway, officially your Mac is not supported for Sonoma.

Will any of my applications break as a result of the upgrade to Ventura or Monterey ?

I would stick with Mojave, one of the better OSX version's just a shame its no longer supported with security fix's. but that's apple and there ecosystem. I bet steve job's has turned many times in his grave at what apple has done to the Pro Market. where in fact Apple started. I have found linux 10X more reliable than the later OSX version's like Ventura.

Just 32 bit apps won't work, but you should not be on Mojave in 2023... You can easily get hacked there...

Sonoma for me is silky, just wait for the final to be out, and its all yours!

To check if an app is 32 bit, go to Finder > Applications > then press Command + I on the app you think is 32 bit. It will say 32 Bit Intel where I have it highlighted if it won't work. If you see this, try looking for an updated version, find a replacement, or just don't update.

By now, there should be a 64 Bit Intel or Apple Silicon Universal version, especially if you see its a rounded app like below.

However, if you regularly update, you should be fine for that app.

Also for the web based apps, Safari will blow the performance of Safari 14/13/12 as it is the fastest browser.

P.S. I am guessing he wants to update because of the Widgets. Gen Z already like this update from what they see (Personally why I beta tested tbh)
