Hi.
I have an M1 MacMini connect via USB-C to a 15,6" Blitzwolf portable display and I got adaptive sync (24-60Hz) option in the Display prefs into the beta 9 and 10 but in 12.0.1 is gone.
Any help/suggestion i s appreciated.

Sorry late answer.

Seems to be working for me.

Turn it on on the monitor itself then go to display settings and chose variable under refresh rate.

There's something wrong. It works with an LG display via usb-c/dp but not via hdmi. Strictly talking, Freesync, which is AMD's adaptive sync, works also via hdmi (as per they're statement) but this is not Freesync, is Apple's Pro Motion which may differ. Or maybe the problem is the cable. On the paper any hdmi cable should be ok but nothing I know about Pro Motion's requirements. I've ordered an 8K/60Hz - 4K/144Hz hdmi cable and I'll see what happens.

As far as I know it only works over DisplayPort 1.2a so you need to use either TB to DP adapter or have a monitor connecting through TB (which I have).

OK. I believe the mistery is solved. I'm now using a 15,6" portable display with 2 x usb-c and 1 x HDMI. So it doesn't work. In fact, connecting with a TB cable, it doesn't as DP is not supported bu the display.
