What, in your opinion, are the most polished, most professional, most useful apps? Right now, my list mostly contains:

Remember The Milk
iProcrastinate Mobile
Beejive IM
Bloomberg

What do you guys think?

iProcastinate is NOT polished. It's horribly implemented with menu bars jumping all over the place. And the user interface is hardly intuitive or logical.

Polished apps:

Hold Em
Dizzy Bee
Bubble Bash
Motion X Poker
Facebook
Datacase
Jaadu
Space Monkey
Monkey Lab
Loopy Lab
Brushes
Weightbot

in addition to what's already been mentioned, some more useful apps I think include

epocrates
iDicto
Twinkle
1Password

for games, I think these are high quality (again, that haven't been mentioned already)
Trism
Toy Bot Diaries
TanZen
Imanji
Enigmo
Collapse Chaos

Remote is a joke. With all of Apple's resources I should be able to put Apple Remote away and never touch it. This App doesn't see anything in Shared Movies/TV Shows without first navigating with the Apple Remote.

I agree with several of these already.

Only one to add:
Photogene

Does pretty well to make the pictures look a tad better from the iPhone and the interface is pretty smooth.

I recently made a list of applications I thought shone in UI, and functionality,
by sourcing their icons and linking directly to the App Store for each item.

I tend to update it every 2 months or so. It's due for anther update next week.

I've called it "The Ultimate list of 'Noteworthy' iPhone applications".
It's probably not, but it felt like it when I was creating it.

For anyone interested, you can find the list: Here.

for me it's Gazette, Jaadu, Beejive, Remember the Milk, Briefcase & Bloomberg. I would love MobileFiles and iMapMyRun to be in there too, but limited features and bugs respectively are holding them back for now. The latter should/could have been so much better.

I'm hoping that when they're released the following will be added to the list: Rolando, QuickOffice, Documents To Go.
