I have a friend looking at a few 2015 13” MacBook Pro’s

What does the forum think about $800 for a mint condition i5 2.7 with 8gb Ram and a 128ssd?

My thought was to pop a $120 NVMe SSD in there for her, so not worried about 128ssd
 
Bought one of these (exact same specs) in November 2018 for 726 Euros on eBay. I observed the market for some time, prices ranged from 650 to 780 (in Euros), depending on condition.

The one I purchased really was immacculate

There is a feature on eBay where you can see what the 'sold' price was for an item, the pricing for mint seems to range between $600-750 see link below:

With regards to ssd while it's possible to use Samsung's NVMe, it's not as straight forward and may have some compromises. I'd recommend buying a Macbook that already has the storage you need, or getting a used Apple SSD off ebay, they are not too expensive these days.
