Ok, so 3 times in the past week or so, my 2011 Air has just frozen solid when opening applications. I didn't pay attention the first or second time, but the third time I was trying to open iTunes and the beachball appeared on the screen - all commands stopped working except the off button.

Problem is, when I switch the Air back on again, I'm not getting any error/bug reports so I have no idea how to troubleshoot?

FWIW I never had a crash before Mountain Lion, so I'm assuming that OS 10.8 is the problem.

Does the system produce a crash log somewhere?

Yeah it does.
There are a couple things you can do. You can open Terminal and type in last. That will tell you about your last crash. Post it here and smarter people than me will tell you what it means.

All logs are located here: /private/var/log/system.log
