Does anyone know if there is enough airflow if you decide to wall-mount your Mac Mini behind your TV? I have a good couple inches all around the mac mini but I am not sure how much air flow is needed for the Mac Mini to run efficiently (like sitting on a desk for example).

It should work just fine, as long as it's not too cramped or too close to the heat from the TV.

Just make sure to keep the back (side with the ports) fairly open (possibly mount it with that side up) since that is where the vents are. If you have a good couple inches on all sides that sounds fine to me.
 
I would not put it behind a plasma, heat. You'll lose the infrared capability.
