Just got a M1 mac mini and everything's running fine.
However, sometimes when I go to upload a file to a website, the mouse disappears.
It's functioning. I just can't see it.
I wiggle the mouse fast to try and get it to 'show itself' but that doesn't work.
I end up hitting 'escape' to kill the dialog window and eventually the mouse comes back.
It's a wireless logitech mouse and I JUST downloaded the latest 'Logitech Options' for it. The 'firmware tool' is a busted link, it looks like.

Problem persists. I ruled out Firefox and Safari as it happens on both browsers.

What version of macOS Big Sur are you using? In my case, and with many other, the mouse disappears/disappeared when starting/restarting the MacOS. The problem started out with BS 11.1. I don't use mouse so I have not come across this problem.

Version 11.2.2

Firmware tool page:

It's not the mouse as it does this with every type of mouse i've tried (logitech and Nexus).

Have you tried working with the trackpad only? See if it faces the same problem. Also, is your mouse connected through bluetooth? Bluetooth on M1 has been problematic for some.

I don't have a trackpad. First mouse was a wireless logitech with a dingle. The other (Nexus) is wired.

It seems to be a bug that even users of Mac laptops/trackpads are experiencing. I won't even attempt to suggest a workaround as you're probably trying anything you can think of.

UPDATE: It was a bug with the app 'Default Folder X.' They sent me an updated version and the problem has gone away.
